1 lb boneless skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 large onion, sliced (yellow or red)

1 bell pepper, sliced (any color)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime

8 small flour or corn tortillas

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, guacamole, salsa

Prep the Chicken: In a medium bowl, combine the sliced chicken with olive oil, chili powder, cumin, paprika, salt, and black pepper. Toss to coat evenly and let marinate for about 10-15 minutes while you prepare the vegetables.

    Cook the Vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the sliced onion and bell pepper. Sauté for 5-7 minutes, stirring occasionally, until they become soft and slightly caramelized. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove the vegetables from the skillet and set aside.

      Cook the Chicken: In the same skillet, increase the heat to medium-high. Add the marinated chicken and cook for about 5-7 minutes, stirring occasionally, until it is cooked through and no longer pink in the center.

        Combine Ingredients: Return the sautéed vegetables back into the skillet with the chicken. Squeeze the lime juice over the mixture and stir well to combine. Cook for an additional minute to warm everything through.

          Warm the Tortillas: While the chicken and veggies are cooking, you can warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and place them in a warm oven (200°F or 93°C) until ready to serve.

            Serve: Fill each tortilla with the chicken and vegetable mixture. Garnish with fresh cilantro, and add any other desired toppings such as sour cream, guacamole, or salsa.
