2 salmon fillets (6 oz each)

1/4 cup teriyaki sauce (store-bought or homemade)

1 cup jasmine rice

2 cups water

1 cup broccoli florets

1 medium carrot, julienned

1/2 cup snap peas

1 tablespoon olive oil

1 tablespoon sesame seeds

2 green onions, sliced

Salt and pepper to taste

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the teriyaki sauce over them. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge for more flavor).

    Cook the Rice: In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork when done.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add broccoli, carrots, and snap peas. Sauté for about 5-7 minutes until vegetables are tender-crisp. Season with salt and pepper.

        Cook the Salmon: In the same skillet, push the vegetables to the side or remove them momentarily. Add the marinated salmon fillets skin-side down to the skillet. Cook for 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

          Assemble the Bowls: In each serving bowl, add a scoop of jasmine rice, a portion of sautéed vegetables, and a salmon fillet. Drizzle any remaining teriyaki sauce over the top.

            Garnish and Serve: Sprinkle sesame seeds and sliced green onions over each bowl for added flavor and crunch. Serve immediately and enjoy!
