For the Zucchini Bars:

2 cups grated zucchini (about 2 medium zucchini)

1 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

½ cup chopped nuts (walnuts or pecans) - optional

½ cup chocolate chips - optional

For the Cinnamon Glaze:

1 cup powdered sugar

3 tablespoons milk (more if needed)

½ teaspoon ground cinnamon

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If the zucchini is very watery, place it on a clean kitchen towel and squeeze out excess moisture.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and salt until well combined.

        Combine Wet Ingredients: In another bowl, mix the melted butter, eggs, and vanilla extract until smooth.

          Combine Mixtures: Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated zucchini, nuts, and chocolate chips if using. Be careful not to overmix.

            Pour and Bake: Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

              Prepare the Glaze: While the bars are baking, prepare the cinnamon glaze. In a small mixing bowl, whisk together the powdered sugar, milk, cinnamon, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
