Fall Crockpot Chicken and Corn Chowder

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

4 cups corn kernels (fresh, frozen, or canned)

1 medium onion (diced)

2 cloves garlic (minced)

3 medium potatoes (peeled and diced)

2 cups chicken broth

1 cup whole milk

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh chives or parsley (for garnish)

Instructions
 

Sauté the Aromatics: In a skillet over medium heat, add the olive oil. Once hot, add the diced onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant. Remove from heat.

    Prepare the Crockpot: In a large crockpot, combine the sautéed onions and garlic with the diced potatoes, corn, chicken thighs, chicken broth, thyme, smoked paprika, salt, and pepper.

      Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.

        Finish the Chowder: Once cooking time is complete, stir in the whole milk and heavy cream into the crockpot. Allow it to heat through for an additional 15-20 minutes on low.

          Taste & Adjust: Before serving, taste the chowder and adjust seasoning if necessary.
