2 cups butternut squash, diced

1 cup Brussels sprouts, halved

1 cup red bell pepper, diced

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup spinach or kale, chopped (optional)

½ cup parmesan cheese, grated (optional, for serving)

Fresh parsley for garnish (optional)

Prep the Veggies: Start by washing and prepping all your vegetables. Dice the butternut squash, halve the Brussels sprouts, slice the carrots, chop the onion, and mince the garlic.

    Layer the Ingredients: In your crockpot, layer the diced butternut squash, Brussels sprouts, carrots, red bell pepper, and onion evenly at the bottom.
