1 lb elbow macaroni

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

3 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup breadcrumbs (panko preferred for extra crunch)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until golden, creating a roux. Gradually whisk in the milk and bring to a simmer, stirring continuously until the sauce thickens (about 5-7 minutes).

      Add Cheeses: Lower the heat and add the cheddar cheese, mozzarella cheese, and cream cheese into the sauce, stirring until fully melted and smooth. Season with garlic powder, onion powder, Dijon mustard, smoked paprika, salt, and pepper. Remove from heat.

        Combine Pasta and Sauce: In a large mixing bowl, combine the drained macaroni with the cheese sauce. Mix well until all the pasta is thoroughly coated.
