4 boneless, skinless chicken breasts

8 ounces of cremini mushrooms, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Gruyère cheese (or mozzarella)

1 cup fresh spinach, roughly chopped

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sliced mushrooms. Sauté for about 5-7 minutes until the onions are translucent and mushrooms are soft. Add minced garlic and cook for another minute until fragrant.

      Prepare the Creamy Sauce: In a bowl, whisk together heavy cream, chicken broth, Dijon mustard, dried thyme, smoked paprika, salt, and pepper. Pour this mixture into the skillet with the sautéed vegetables, stirring to combine.

        Add Chicken: Place the chicken breasts evenly in the skillet, ensuring they are covered by the creamy mushroom sauce. Sprinkle half of the Gruyère cheese on top of the chicken.

          Bake the Dish: Transfer the skillet to the preheated oven and bake uncovered for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the sauce is bubbly.

            Add Spinach and Remaining Cheese: In the last 5 minutes of baking, add the chopped spinach on top and sprinkle the remaining Gruyère cheese. Return to the oven and bake until the cheese is melted and golden.

              Garnish and Serve: Once baked, remove from the oven. Let it cool for a few minutes, then garnish with freshly chopped parsley before serving.
