Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup Sriracha sauce (adjust to taste)

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon olive oil

2 tablespoons sesame seeds (optional, for garnish)

Chopped green onions (for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Prepare Cauliflower: In a large bowl, combine the cauliflower florets with the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until the cauliflower is well coated with the batter.

Bake the Bites: Spread the batter-coated cauliflower evenly on the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes, or until the cauliflower is golden and crispy, flipping halfway through.

Make the Fiery Sauce: While the cauliflower is baking, mix the Sriracha sauce, honey (or maple syrup), and olive oil in a small bowl until well combined.

Toss in Sauce: Once the cauliflower is baked to perfection, remove it from the oven and transfer it to a large mixing bowl. Pour the Fiery Sriracha sauce over the baked cauliflower and toss until all the pieces are thoroughly coated.

Return to Oven: Place the sauce-coated cauliflower back on the baking sheet. Return to the oven for an additional 5-10 minutes, allowing the sauce to caramelize slightly.

Garnish and Serve: Remove the cauliflower bites from the oven and transfer to a serving platter. Garnish with sesame seeds and chopped green onions. Serve warm with a side of ranch or your favorite dipping sauce.
