Ingredients

1 bag of tortilla chips (about 12 oz)

1 cup fig jam (store-bought or homemade)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1/2 cup crumbled goat cheese

1 ripe avocado, diced

1/4 cup sliced pickled jalapeños (adjust to taste)

1/2 cup fresh arugula or baby spinach

1/4 cup toasted walnuts or pecans, chopped

2 tbsp fresh lime juice

1 tbsp honey (optional, for a drizzle)

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Sheet: On a large baking sheet, spread out the tortilla chips in an even layer. Make sure they are not overlapping to ensure even melting of the cheese.

Layer with Fig Jam: Spoon dollops of fig jam evenly over the tortilla chips, ensuring a bite of sweet and savory in every serving.

Cheese It Up: Sprinkle the shredded Monterey Jack and cheddar cheeses generously over the chips and jam. Follow this with crumbled goat cheese for an added creamy tang.

Add Jalapeños: Distribute the sliced jalapeños over the cheese and chips for an extra kick of heat.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheeses are melted and bubbly.

Toppings Time: While the nachos are baking, prepare the fresh toppings. In a mixing bowl, toss the diced avocado with lime juice, salt, and pepper.

Assemble Nachos: Once the nachos are out of the oven, layer the avocado mixture evenly over the cheesy nachos.

Finish with Greens and Nuts: Top with fresh arugula or baby spinach and sprinkle the chopped walnuts or pecans on top for a delightful crunch.

Drizzle and Garnish: If desired, drizzle a little honey over the top for a hint of sweetness. Garnish with fresh cilantro to enhance the aroma and aesthetics.

Serve: Allow the nachos to cool for a minute, then serve immediately with extra fig jam on the side for dipping!
