4 large ripe tomatoes

1 cup fresh corn kernels (about 2 ears of corn)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon olive oil

Salt and pepper to taste

1 cup crumbled feta cheese (or dairy-free alternative)

1/4 cup fresh basil leaves, chopped

1 French baguette or ciabatta loaf, sliced

Balsamic glaze for drizzling (optional)

Fire-Roast the Tomatoes: Preheat a grill or open flame. Place the tomatoes directly over the heat, turning occasionally until the skins blister and char (about 5-7 minutes). Remove and let them cool slightly, then peel off the skins and roughly chop.

    Cook the Corn: In a skillet over medium heat, add the olive oil and diced red onion. Sauté for about 5 minutes until translucent. Add the minced garlic and smoked paprika, cooking for an additional minute until fragrant. Stir in the fresh corn kernels and cook for another 3-4 minutes until just tender.

      Combine Ingredients: In a mixing bowl, combine the fire-roasted tomatoes, sautéed corn mixture, and chopped basil. Season the mixture with salt and pepper to taste.

        Prepare the Toast: Preheat your oven's broiler. Arrange the sliced baguette on a baking sheet. Lightly brush or drizzle with olive oil and place under the broiler for 1-2 minutes until lightly toasted. Keep a close eye to avoid burning.
