Firecracker Chicken Meatballs

1 lb ground chicken

1/2 cup breadcrumbs (panko preferred for extra crunch)

1/4 cup green onions, finely chopped

1/4 cup cilantro, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 egg, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (adjust to taste)

1/3 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

Sesame seeds for garnish

Extra green onions for garnish

Prepare the Meatball Mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, green onions, cilantro, minced garlic, minced ginger, beaten egg, salt, black pepper, and red pepper flakes. Mix until everything is well incorporated, but avoid over-mixing as it can make the meatballs tough.

    Shape the Meatballs: Preheat your oven to 400°F (200°C). Scoop out about 1.5 tablespoons of the meatball mixture and roll it into a ball. Repeat with the remaining mixture and place the meatballs on a baking sheet lined with parchment paper.

      Bake the Meatballs: Bake the meatballs in the preheated oven for 18-20 minutes or until they are cooked through and have a slight golden crust.

        Prepare the Firecracker Sauce: While the meatballs are baking, in a small saucepan over medium heat, combine sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Stir well and let it simmer for 3-4 minutes until slightly thickened. Remove from heat.

          Coat the Meatballs: Once baked, remove the meatballs from the oven and transfer them to a large bowl. Drizzle the firecracker sauce over the top and gently toss to coat each meatball evenly.

            Garnish and Serve: Transfer the coated meatballs to a serving dish. Sprinkle sesame seeds and extra chopped green onions on top for garnish. Serve warm as an appetizer or over rice for a complete meal.
