1 lb large shrimp, peeled and deveined

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup mayonnaise

2 tablespoons Sriracha (adjust for spice level)

1 tablespoon honey

1 tablespoon soy sauce

1 teaspoon sesame oil

1 tablespoon lime juice

1/4 cup scallions, chopped

1/4 cup chopped fresh cilantro

1 head butter lettuce or iceberg lettuce, leaves separated

Sesame seeds for garnish

Instructions
 

Prepare the Sauce: In a small bowl, whisk together mayonnaise, Sriracha, honey, soy sauce, sesame oil, and lime juice until smooth. Taste and adjust the spice level if necessary. Set aside.

    Cook the Shrimp: Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, sautéing for about 1 minute until fragrant.

      Add Shrimp: Add the shrimp to the pan in a single layer. Let them cook undisturbed for about 2 minutes until they turn pink on one side. Flip and cook for an additional 2 minutes or until fully cooked through.

        Coat with Sauce: Once shrimp are cooked, remove them from heat and drizzle half of the prepared sauce over the shrimp, tossing to coat evenly.

          Assemble the Lettuce Cups: Take a lettuce leaf and spoon a generous amount of the saucy shrimp into the center. Top with chopped scallions and cilantro.
