1 cup almond flour

1/4 cup coconut flour

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 cup almond milk (or any milk of choice)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon melted coconut oil (plus extra for greasing)

Prepare the Batter: In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Whisk well until evenly mixed.

    Mix Wet Ingredients: In another bowl, whisk together the eggs, almond milk, honey (or maple syrup), and vanilla extract until smooth. Make sure the honey is well incorporated.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix; a few lumps are okay. Add the melted coconut oil and gently mix until fully combined.

        Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of coconut oil.

          Cook the Pancakes: Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles start to form on the surface and the edges appear set, about 2-3 minutes. Flip the pancake and cook for another 2-3 minutes until golden brown.
