3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup granulated sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Preheat Your Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Combine Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Stir in the melted coconut oil until combined. Then add the beaten egg, sugar, and vanilla extract, mixing until everything is well-integrated.

      Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

        Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients. Stir gently until just combined; be careful not to overmix. A few lumps are perfectly fine.

          Fold in Chocolate Chips: Carefully fold in the semi-sweet chocolate chips and optional nuts until evenly distributed.

            Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool Down: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
