Ingredients

2 cups fresh cherries, pitted and halved

1 cup milk (whole or 2%)

3 large eggs

2/3 cup granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon almond extract (optional)

1 cup all-purpose flour

1/4 teaspoon salt

2 tablespoons unsalted butter, melted (plus extra for greasing)

Powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round or square baking dish with butter.

Prepare the Cherries: Rinse the fresh cherries thoroughly under cold water. Remove the stems and pit them if not already done. Cut the cherries in half and set them aside.

Make the Batter: In a large mixing bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, and almond extract (if using) until well combined. Gradually add in the flour and salt, whisking until the batter is smooth.

Melt the Butter: In a separate small bowl, melt the 2 tablespoons of butter in the microwave or on the stovetop. Allow it to cool slightly before adding it to the batter. Stir to incorporate the melted butter.

Combine: Gently fold the halved cherries into the batter, ensuring they’re evenly distributed.

Bake: Pour the batter into the prepared baking dish, ensuring the cherries are nicely spread throughout. Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed up and a deep golden color. A toothpick inserted into the center should come out clean.

Cool and Serve: Allow the clafoutis to cool for about 10-15 minutes before slicing. Dust with powdered sugar for a touch of sweetness, and serve warm or at room temperature.

Enjoy: This clafoutis can be enjoyed as a breakfast treat, a dessert, or a delightful afternoon snack with coffee or tea!
