Ingredients

2 ripe mangoes, peeled and diced

1 cup shredded red cabbage

1 cup corn kernels (fresh or canned)

1 avocado, sliced

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

1 lime, juiced

1 tablespoon olive oil

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

8 small corn tortillas

Optional: Crumbled feta or cotija cheese for topping

Instructions

Prepare the Mango Salsa: In a mixing bowl, combine the diced mangoes, red onion, cilantro, lime juice, and a pinch of salt and pepper. Toss gently and set aside to let the flavors marry.

Prepare the Corn Salad: In another bowl, mix the corn kernels with olive oil, ground cumin, chili powder, salt, and pepper. Stir to ensure the corn is coated evenly.

Warm the Tortillas: Heat a skillet over medium heat. Lightly toast each corn tortilla for about 30 seconds on each side, or until they are warm and pliable.

Assemble the Tacos: On each tortilla, layer a small handful of shredded red cabbage, followed by a spoonful of the corn salad, and a few slices of avocado. Top with a generous spoonful of the mango salsa.

Optional Toppings: If using, sprinkle crumbled feta or cotija cheese over the tacos for an added creamy texture.

Serve: Arrange the tacos on a platter or individual plates, squeeze additional lime juice over, and serve immediately, garnished with extra cilantro if desired.
