For the crust:

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cubed

4–5 tablespoons ice water

For the filling:

4 ripe peaches, pitted and sliced

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ cup brown sugar

1 tablespoon lemon juice

2 tablespoons cornstarch

1 tablespoon unsalted butter, cut into small pieces

For assembly:

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Prepare the crust: In a medium bowl, whisk together the flour, salt, and sugar. Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

    Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overwork it. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.

      Make the filling: In a large bowl, combine the sliced peaches, cinnamon, nutmeg, brown sugar, lemon juice, and cornstarch. Toss everything together until the peaches are well-coated. Let the mixture sit for about 15 minutes to allow the flavors to meld.

        Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

          Roll out the dough: On a lightly floured surface, roll out the chilled dough to a 12-inch circle. Transfer the dough to the prepared baking sheet.

            Assemble the galette: Spoon the peach filling into the center of the rolled-out dough, leaving about a 2-inch border around the edges. Fold the edges of the dough over the filling, pleating it as you go. Dot the filling with small pieces of butter.

              Egg wash and sprinkle: Brush the crust with the beaten egg and sprinkle coarse sugar over the edges for added crunch and sweetness.

                Bake the galette: Place the galette in the preheated oven and bake for 35–40 minutes, or until the crust is golden brown and the filling is bubbly.

                  Cool and serve: Allow the galette to cool for about 10 minutes before slicing. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
