Fresh Summer Chicken Skillet

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 medium zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

2 cups spinach

Juice of 1 lemon

¼ cup fresh basil, chopped

Parmesan cheese, for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Make sure both sides are evenly coated.

    Heat the Skillet: In a large skillet, heat olive oil over medium-high heat. Once it’s hot, add the seasoned chicken breasts and sauté for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a little more olive oil if needed. Toss in the diced zucchini, red and yellow bell peppers, and cook for about 5-6 minutes until they start to soften. Add the cherry tomatoes and corn, cooking for an additional 3-4 minutes until tomatoes begin to burst and everything is heated through.

        Add the Greens: Toss in the spinach and lemon juice, cooking just until the spinach wilts (about 1-2 minutes). Then, return the chicken to the skillet to heat through.
