For the Tortilla Chips:

8 corn tortillas, cut into triangles

1 cup vegetable oil (for frying)

Sea salt, to taste

For the Fresh Toppings:

1 cup cherry tomatoes, diced

1 avocado, diced

1 cup black beans, rinsed and drained

1 cup corn, fresh or canned and drained

1 small red onion, finely chopped

1 small jalapeño, diced (seeds removed for less heat)

1 cup shredded fresh cilantro

Juice of 2 limes

Salt and pepper, to taste

For the Cheese Sauce:

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese

1/2 cup milk

1 tablespoon taco seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

For Serving:

Sour cream

Guacamole

Salsa

Extra fresh cilantro for garnish

Instructions
 

Prepare the Tortilla Chips:

    - Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C).

      - Fry the tortilla triangles in batches, taking care not to overcrowd the pan. Cook until golden brown, about 2-3 minutes per side.

        - Use a slotted spoon to remove the chips and let them drain on paper towels. Sprinkle with sea salt while still warm.

          Make the Cheese Sauce:

            - In a medium saucepan over low heat, combine the grated cheddar cheese, cream cheese, and milk. Stir until melted and smooth.

              - Add the taco seasoning, garlic powder, and onion powder. Mix well and keep on low heat until ready to serve, stirring occasionally to prevent sticking.

                Prepare the Fresh Toppings:

                  - In a large mixing bowl, combine the diced cherry tomatoes, avocado, black beans, corn, red onion, jalapeño, and half of the lime juice. Season with salt and pepper to taste. Add the fresh cilantro and mix gently.
