Fresh Tomato Zoodle Salad

4 medium-sized zucchini

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/4 cup red onion, thinly sliced

1/4 cup fresh basil leaves, torn

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey or agave syrup

Salt and pepper, to taste

Optional: 1/4 teaspoon crushed red pepper flakes for a spicy kick

Instructions
 

Prepare the Zoodles: Use a spiralizer to turn the zucchini into noodle-like strands (zoodles). If you don’t have a spiralizer, you can use a vegetable peeler to create long ribbons. Set aside in a colander to drain excess moisture.

    Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey/agave syrup, salt, pepper, and crushed red pepper flakes if using. Adjust seasoning to your taste.

      Combine the Ingredients: In a large mixing bowl, add the zoodles, halved cherry tomatoes, mozzarella balls, and sliced red onion. Toss gently to combine.

        Dress the Salad: Pour the dressing over the zoodle mixture and toss again until everything is well-coated.
