Ingredients

2 ripe bananas, mashed

1 ½ cups rolled oats

1/2 cup almond milk (or milk of choice)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Pinch of salt

1/2 cup mini chocolate chips, optional

1/2 cup chopped nuts (walnuts or pecans), optional

Instructions

Prepare the Mixture: In a large mixing bowl, combine the mashed bananas, rolled oats, almond milk, honey (or maple syrup), almond butter, vanilla extract, ground cinnamon, and a pinch of salt. Mix well until all the ingredients are thoroughly combined and form a sticky dough.

Add Extras: If desired, fold in the mini chocolate chips and chopped nuts to the mixture for added texture and flavor. This step is optional but recommended for a delicious twist!

Shape the Coins: Use a tablespoon or cookie scoop to portion out the mixture onto a parchment-lined baking sheet. Flatten each scoop slightly with the back of the spoon to form coin shapes. Aim for a thickness of about 1/2 inch.

Freeze: Place the baking sheet in the freezer for about 1-2 hours, or until the oatmeal coins are firm.

Serve or Store: Once frozen, remove the coins from the baking sheet and place them in a zip-top bag or airtight container. Store them in the freezer for up to 3 months. To enjoy a snack, simply take out a few and let them sit at room temperature for a few minutes, or enjoy them straight from the freezer!

Optional Serving Suggestion: For an extra treat, spread a thin layer of almond or peanut butter between two oatmeal coins to create a delightful sandwich!
