Frozen Berries & Oats Breakfast Bark

2 cups rolled oats

1 cup mixed frozen berries (blueberries, raspberries, strawberries)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1/4 cup almond milk (or any milk of choice)

1/4 cup chia seeds (optional, for added texture)

A pinch of salt

1/2 teaspoon vanilla extract

Toppings: sliced almonds, coconut flakes, or extra fresh berries (optional)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats, chia seeds (if using), and a pinch of salt. Mix well to ensure even distribution of the dry ingredients.

    Mix the Wet Ingredients: In a separate smaller bowl, whisk together the Greek yogurt, honey (or maple syrup), almond milk, and vanilla extract until smooth and homogenous.

      Combine: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until everything is well combined, and the oats are evenly coated.

        Layer with Berries: Gently fold in the mixed frozen berries, being careful not to crush them too much. You want to see the berries mostly intact for a beautiful presentation.

          Spread on Baking Sheet: Line a baking sheet with parchment paper. Transfer the mixture onto the sheet and spread it evenly with a spatula to about 1/2 inch thick.

            Add Toppings: If desired, sprinkle your choice of toppings like sliced almonds, coconut flakes, or extra fresh berries over the top.

              Freeze: Place the baking sheet in the freezer for at least 4 hours, or until the bark is completely set and frozen solid.

                Break and Store: Once frozen, remove the bark from the baking sheet and break it into pieces. Store in an airtight container in the freezer, separating layers with parchment paper to prevent sticking.

                  Serve: Grab a piece from the freezer each morning for a quick breakfast on-the-go. Enjoy it as is or pair it with a drizzle of honey or a dollop of yogurt if desired.
