Frozen Blueberry Lemon Bars

For the crust:

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1/4 teaspoon salt

For the lemon filling:

2 large eggs

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

1/4 cup all-purpose flour

1 cup frozen blueberries

For serving:

Powdered sugar (for dusting)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine the flour, sugar, melted butter, and salt. Stir until well mixed. Press the mixture evenly into the bottom of an 8x8-inch baking pan. Bake for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let cool slightly.

    Make the lemon filling: In another bowl, whisk together the eggs and sugar until well combined. Add the lemon juice and lemon zest, mixing until smooth. Sift in the 1/4 cup of flour and mix until just incorporated. Gently fold in the frozen blueberries, being careful not to break them up too much.

      Combine and bake: Pour the lemon-blueberry filling over the pre-baked crust, spreading it evenly. Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.

        Cool and freeze: Remove from the oven and let cool to room temperature. Once cooled, cover the pan with plastic wrap and place it in the freezer for at least 2 hours or until completely frozen.
