Ingredients

1 cup almond flour

1/2 cup unsweetened shredded coconut

1/4 cup maple syrup (or honey)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1 cup dark chocolate chips (dairy-free if desired)

1 tablespoon coconut oil (for melting with chocolate)

1/4 cup slivered almonds (for topping)

Instructions

Prepare the Base:

In a mixing bowl, combine the almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix until a dough-like consistency forms. The mixture should hold together when pressed.

      Form the Squares:

Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture evenly into the bottom of the dish, creating a smooth layer. Make sure it’s well-packed.

          Freeze the Base:

Place the dish in the freezer for about 30 minutes to firm up while you prepare the chocolate topping.

              Melt the Chocolate:

In a microwave-safe bowl or using a double boiler, combine the dark chocolate chips with the tablespoon of coconut oil. Heat in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

                  Assemble the Squares:

Once the base is firm, remove the dish from the freezer. Pour the melted chocolate over the almond coconut layer, spreading it evenly with a spatula. Before the chocolate sets, sprinkle the slivered almonds on top, pressing them lightly into the chocolate.

                      Final Freeze:

Return the dish to the freezer for an additional 1-2 hours or until the chocolate topping has fully hardened.

                          Cut and Serve:

Once frozen, lift the squares out of the dish using the parchment paper. Place on a cutting board and cut into small squares. Enjoy immediately or store in an airtight container in the freezer for up to two weeks.
