1 cup Greek yogurt (plain or coconut-flavored)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup unsweetened shredded coconut

1/2 cup dark chocolate chips (or dairy-free chocolate chips)

1 tablespoon coconut oil

A pinch of sea salt

Optional: chopped nuts or seeds for topping

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until smooth and creamy.

    Add Coconut: Gently fold in the shredded coconut until evenly distributed throughout the yogurt mixture.

      Form Yogurt Rounds: Line a baking sheet with parchment paper. Using a spoon or small cookie scoop, drop tablespoons of the yogurt mixture onto the prepared baking sheet, flattening each dollop into rounds about 1/2 inch thick. Leave some space between each round.

        Freeze: Place the baking sheet in the freezer and let the yogurt rounds freeze for about 2 hours or until completely solid.
