Frozen Coconut Vanilla Chia Bites

Ingredients
  

1 cup coconut milk (canned for creaminess)

1/4 cup chia seeds

1/4 cup maple syrup (or honey for non-vegan)

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

A pinch of sea salt

Optional toppings: dark chocolate chips, crushed nuts, or a sprinkle of cinnamon

Instructions
 

Mix the Base: In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, and a pinch of sea salt. Whisk together until all ingredients are well blended.

    Let it Rest: Allow the mixture to sit for about 5-10 minutes. This will activate the chia seeds and help them thicken the mixture.

      Stir and Pour: After the resting period, stir the mixture again to ensure the chia seeds are evenly distributed. Then, pour the mixture into silicone molds or ice cube trays, filling them about halfway.

        Add Coconut: Sprinkle the shredded coconut evenly over the top of the chia mixture in the molds, pressing down slightly to ensure it sticks.

          Freeze: Place the molds in the freezer for at least 4 hours, or until the bites are completely frozen.

            Remove and Serve: Once frozen, carefully pop the chia bites out of the molds. You can roll them in extra shredded coconut if desired or top with dark chocolate chips or nuts for added flavor.

              Store: Place the bites in an airtight container and store them in the freezer. Enjoy as a cool snack or a healthy dessert treat!
