Ingredients
  

2 ripe mangoes, peeled and diced

1 ½ cups coconut yogurt (dairy-free or regular, as preferred)

1 ripe banana, mashed

¼ cup honey or maple syrup (adjust for sweetness)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

¼ cup shredded unsweetened coconut

Pinch of salt

Optional garnish: lime zest and extra shredded coconut

Blend the Base: In a blender, combine the diced mangoes, coconut yogurt, mashed banana, honey (or maple syrup), lime juice, and vanilla extract. Blend until smooth and creamy. Taste the mixture and add more sweetener if necessary.

    Mix in Coconut: Stir in the shredded coconut and a pinch of salt until evenly distributed.

      Prepare the Mold: Line a 9x5 inch loaf pan or a silicone mold with parchment paper for easy removal. If using a silicone mold, there’s no need for parchment paper.

        Fill the Mold: Pour the yogurt mixture evenly into the prepared pan, smoothing the top with a spatula.

          Freeze: Cover the mold with plastic wrap or a lid. Place it in the freezer and freeze for at least 4 hours, or until solid.

            Cut into Bars: Once fully frozen, remove the pan from the freezer. If using a loaf pan, lift the frozen yogurt out using the parchment paper. Use a sharp knife to slice it into bars.

              Garnish and Serve: Optionally, sprinkle with lime zest and extra shredded coconut for an extra tropical touch. Serve immediately or store in an airtight container in the freezer for up to two weeks.
