Ingredients

For the crust:

1 cup graham cracker crumbs

2 tablespoons granulated sugar

1/4 cup unsalted butter, melted

For the cheesecake filling:

1 cup cream cheese, softened

1/2 cup powdered sugar

1/2 cup sour cream

1/4 cup fresh lime juice (about 2 limes)

Zest of 1 lime

1 cup mango puree (fresh or canned)

1 teaspoon vanilla extract

For the topping:

Whipped cream

Lime slices (for garnish)

Fresh mango chunks (optional)

Instructions

Prepare the crust:

    - In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated and resemble wet sand.

      - Press the mixture into the bottom of individual serving cups or small glasses to form a crust. Use a spoon or your fingers to ensure it's firmly packed. Place the crusts in the freezer while you prepare the filling.

        Make the cheesecake filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Scrape down the sides as needed to ensure even mixing.

            - Gradually add the powdered sugar and continue to beat until fully incorporated.

              - Add the sour cream, fresh lime juice, lime zest, mango puree, and vanilla extract. Blend until the mixture is creamy and well combined, scraping down the sides of the bowl as needed.

                Assemble the cups:

                  - Once the crusts have set in the freezer for about 10-15 minutes, remove them and spoon the mango-lime cheesecake filling over the crusts. Fill the cups about 3/4 full, leaving some space at the top.

                    Freeze the cups:

                      - Place the filled cups back in the freezer and let them set for at least 4 hours, or until they are firm.

                        Serve:

                          - To serve, remove the frozen cheesecake cups from the freezer and let them sit at room temperature for about 5 minutes for easier removal from the cups. Top each cup with a dollop of whipped cream, a slice of lime, and fresh mango chunks if desired.

                            Enjoy:

                              - Grab a spoon and dig in! These refreshing cups are perfect for a hot day or as a delightful dessert for any occasion.
