Frozen Mango Pineapple Pops

2 ripe mangoes, peeled and diced

1 cup fresh or frozen pineapple chunks

1/2 cup coconut milk (canned for creaminess)

2 tablespoons honey or maple syrup (adjust to taste)

Juice of 1 lime

1/2 tsp vanilla extract (optional)

Pinch of sea salt

Instructions
 

Blend the Fruits: In a blender, combine the diced mangoes, pineapple chunks, coconut milk, honey (or maple syrup), lime juice, vanilla extract, and a pinch of sea salt. Blend until smooth and creamy.

    Taste and Adjust: Taste the mixture and adjust the sweetness by adding a bit more honey or syrup if needed. Blend again to incorporate any added ingredients.

      Pour into Molds: Pour the blended mixture into ice pop molds, leaving a little space at the top for expansion when freezing. If you don't have molds, small cups or ice cube trays work well too.

        Insert Sticks: If using molds with sticks, insert the sticks into the center of each mold. If using cups or trays, freeze for about 1-2 hours until partially firm before inserting wooden sticks.

          Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

            Unmold and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds to loosen them. Carefully pull the pops out and enjoy immediately!

              Store Leftovers: Place any leftover pops in a resealable bag in the freezer for future treats.
