Frozen Mixed Berry Smoothie Cubes

2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

1 ripe banana

1 cup Greek yogurt (or dairy-free yogurt)

1 cup coconut water (or any fruit juice of your choice)

1 tablespoon honey or maple syrup (optional, adjust to taste)

1 teaspoon vanilla extract

Fresh mint leaves for garnish (optional)

Prepare the Ingredients: Rinse the mixed berries under cold water and remove any stems from the strawberries. Peel the ripe banana.

    Blend the Base: In a blender, combine the mixed berries, banana, Greek yogurt, coconut water (or juice), honey (if using), and vanilla extract. Blend until the mixture is smooth and creamy.

      Taste and Adjust: Taste the smoothie base. If you prefer a sweeter smoothie, add more honey or maple syrup and blend again briefly to combine.

        Pour into Molds: Carefully pour the blended smoothie mixture into silicone ice cube trays or other molds of your choice. Leave a little space at the top of each cube, as the mixture will expand when frozen.

          Freeze: Place the filled trays in the freezer and allow them to freeze for at least 4 hours, or until completely solid.

            Store the Cubes: Once frozen, carefully remove the smoothie cubes from the trays. Transfer them to a freezer-safe bag or airtight container, and store them in the freezer for up to 2 months.

              Enjoy Your Cubes: To enjoy, simply add 2-3 smoothie cubes to a blender with a splash of your favorite milk or juice, blend until smooth, and you have a delicious smoothie ready to drink! Optionally, garnish with fresh mint leaves for an extra fresh touch.
