2 ripe bananas

1 cup Greek yogurt (plain or vanilla)

¼ cup cocoa powder (unsweetened)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 tablespoon instant coffee or espresso powder

1 teaspoon vanilla extract

A pinch of salt

½ cup chopped nuts (almonds, walnuts, or hazelnuts)

Dark chocolate (for coating, optional)

Shredded coconut (for rolling, optional)

Instructions
 

Prepare the Bananas: Start by peeling the ripe bananas and placing them in a mixing bowl. Mash the bananas with a fork until smooth but still slightly chunky.

    Mix Ingredients: Add the Greek yogurt, cocoa powder, honey (or maple syrup), instant coffee, vanilla extract, and a pinch of salt to the mashed bananas. Stir well until all ingredients are combined and you have a creamy, chocolaty mixture.

      Chill the Mixture: Cover the bowl with plastic wrap or a lid and place it in the freezer for about 30 minutes. This will help the mixture firm up a bit, making it easier to shape into truffles.

        Shape the Truffles: Once the mixture is chilled, remove it from the freezer. Using your hands or a cookie scoop, take small amounts of the mixture and roll them into bite-sized balls (about 1 inch in diameter). Place the truffles on a parchment-lined baking sheet.

          Coat the Truffles (optional): If you wish to coat the truffles, melt dark chocolate in a microwave-safe bowl in 30-second increments, stirring in between, until smooth. Dip each truffle into the melted chocolate, allowing excess to drip off, then return to the baking sheet. Alternatively, you can roll some truffles in shredded coconut for a different texture.

            Freeze the Truffles: Once all truffles are shaped and coated (if desired), place the baking sheet in the freezer for at least 1 hour, or until the truffles are completely frozen.
