Ingredients

2 ripe peaches, peeled and diced

1 cup plain Greek yogurt (or any yogurt of your choice)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: chopped nuts, granola, or shredded coconut

Instructions

Prepare the Peaches: Start by peeling and dicing your ripe peaches into small, bite-sized pieces. If you prefer, you can also puree them in a blender for a smoother texture.

Mix the Yogurt: In a medium-sized bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well until the mixture is smooth and all ingredients are thoroughly incorporated.

Add Peaches: Fold the diced peaches (or peach puree) into the yogurt mixture, ensuring they're evenly distributed.

Determine Portion Size: Using a silicone ice cube tray or mini muffin tin, spoon the peach yogurt mixture into each cavity, filling them about three-quarters full. If desired, sprinkle a bit of chopped nuts, granola, or shredded coconut on top for added texture.

Freeze: Place the filled tray in the freezer for at least 4 hours, or until completely frozen.

Serve: Once frozen, remove the yogurt bites from the tray by gently pressing from the bottom or flexing the silicone tray. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
