2 cups fresh pineapple, diced

1 can (13.5 oz) coconut milk (full fat for creaminess)

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup unsweetened shredded coconut (for garnish)

Fresh mint leaves (for garnish, optional)

Instructions
 

Blend the Base: In a blender, combine the diced pineapple, coconut milk, honey (or maple syrup), vanilla extract, and salt. Blend until smooth and creamy.

    Prepare Molds: Pour the blended mixture evenly into small cups or silicone molds, leaving a little space at the top for expansion during freezing.

      Freeze: Place the molds in the freezer and allow them to freeze for at least 4 hours or until completely solid.

        Garnish Preparation: Once frozen, remove the cups from the freezer. If using silicone molds, gently press from the bottom to pop them out. If in cups, run warm water on the outside of the cup to loosen.
