Ingredients

1 cup pumpkin puree (canned or freshly made)

1/2 cup cream cheese, softened

1/2 cup powdered sugar

1/2 cup whipped topping (thawed if using frozen)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1 pre-made pie crust (store-bought or homemade)

1/4 cup chopped pecans or walnuts (optional, for garnish)

1/4 teaspoon salt

Instructions

Prepare the Pie Crust: If you are using a store-bought pie crust, roll it out according to package instructions. If homemade, roll out your dough to about 1/8 inch thickness. Use a round cookie cutter to cut out small circles (about 2-3 inches wide) from the crust. You should have around 24-30 circles.

Pre-bake the Crust: Preheat your oven to 350°F (175°C). Place the pie crust circles in a mini muffin tin, pressing the dough into the bottom and sides. Bake for 10-12 minutes or until lightly golden. Allow to cool completely.

Make the Filling: In a large mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, whipped topping, vanilla extract, pumpkin pie spice, and salt. Whisk together until smooth and creamy, ensuring there are no lumps.

Fill the Bites: Once the crusts are cooled, carefully fill each mini crust with the pumpkin filling mixture. Use a small offset spatula or the back of a spoon to smooth the tops. Don’t overfill; aim for a little mound on top.

Freeze: Place the filled muffin tin in the freezer and let the bites freeze for at least 2 hours until they've set.

Serve and Garnish: Once frozen, gently pop the pumpkin pie bites out of the muffin tin. If desired, sprinkle with chopped pecans or walnuts for added texture and flavor.

Store: Keep the frozen pumpkin pie bites in an airtight container in the freezer until ready to serve. These can be enjoyed straight from the freezer for a refreshing treat!
