Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup sour cream

1 cup pureed fresh or frozen strawberries (thawed if using frozen)

1 tablespoon lemon juice

½ cup strawberry jam (optional, for drizzling)

Fresh strawberries, for garnish (optional)

Instructions
 

Prep the Crust:

    - In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.

      - Press the mixture firmly into the bottom of an 8x8 inch (or similar size) baking pan lined with parchment paper, creating an even layer. Set aside.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until creamy and smooth, about 2-3 minutes.

            - Gradually add the powdered sugar and continue to beat until well incorporated.

              - Mix in the vanilla extract and sour cream until fully combined.

                Add Strawberry Flavor:

                  - Gently fold in the pureed strawberries and lemon juice into the cream cheese mixture. Be careful not to overmix; you want to keep some of the strawberry swirls visible!

                    Assemble the Bars:

                      - Pour the cheesecake filling over the prepared crust, spreading it evenly with a spatula.

                        - If desired, drizzle the strawberry jam over the top and use a toothpick to create a marbled effect for a beautiful presentation.

                          Freeze:

                            - Cover the baking pan with plastic wrap and place it in the freezer. Freeze for at least 4 hours, or until the cheesecake is firm.

                              Serve:

                                - Once frozen, remove the cheesecake from the pan using the parchment paper. Place on a cutting board and cut into bars with a sharp knife, wiping the knife with a damp cloth between cuts for clean edges.
