Ingredients

1 cup fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon lemon juice

1 cup heavy whipping cream

3 tablespoons powdered sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/3 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract (for the cookies)

1/4 teaspoon salt

1/2 teaspoon baking powder

Instructions

Prepare the Strawberry Filling: In a medium bowl, combine the sliced strawberries, 2 tablespoons of granulated sugar, and lemon juice. Toss gently and let them macerate for about 30 minutes, stirring occasionally. This will enhance the strawberry flavor and create a syrup.

Make the Cookies: In a large mixing bowl, cream together the softened butter and 1/3 cup of granulated sugar until light and fluffy. Beat in the egg and 1/2 teaspoon of vanilla until well combined.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, and salt.

Mix Together: Gradually add the flour mixture to the wet ingredients, mixing until just combined. Do not overmix.

Shape the Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly to form disks. Bake for 10-12 minutes or until the edges are golden. Allow cookies to cool completely on a wire rack.

Prepare Whipped Cream: While the cookies cool, make the whipped cream. In a large mixing bowl, combine heavy whipping cream, powdered sugar, and 1 teaspoon of vanilla extract. Beat with an electric mixer on medium-high speed until soft peaks form.

Assemble the Sandwich Coins: Once the cookies are cool, take one cookie, spoon a dollop of whipped cream on top, followed by a spoonful of the macerated strawberries. Then, place another cookie on top to create a sandwich. Repeat with remaining cookies.

Freeze and Serve: Arrange the assembled sandwiches on a baking sheet and freeze for at least 1 hour to set. Once frozen, you can store them in an airtight container for up to 2 weeks. Enjoy them straight from the freezer!
