Greek yogurt serves as the foundation of this recipe, offering a creamy base that is both delicious and nutritious. Unlike regular yogurt, Greek yogurt is strained to remove excess whey, resulting in a thicker texture and a higher protein content. This makes it an excellent choice for those looking to boost their protein intake while enjoying a light snack.

Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

2 teaspoons matcha green tea powder

1/4 cup dark chocolate chips (optional, for drizzling)

Fresh berries (strawberries, raspberries, or blueberries for topping)

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until completely smooth and creamy.

Separate for Matcha: Divide the yogurt mixture into two separate bowls. In one bowl, add the matcha green tea powder and whisk until evenly incorporated, creating a vibrant green yogurt mix.

Layering: Using a silicone ice cube tray or mini muffin tin, alternate spoonfuls of the plain yogurt mix and the matcha yogurt mix. Start with a layer of plain yogurt, followed by a layer of matcha yogurt. Repeat until the molds are filled, leaving a little space at the top to allow for expansion when freezing.

Optional Chocolate Drizzle: If desired, melt the dark chocolate chips in a microwave-safe bowl in 20-second intervals until fully melted. Use a spoon or piping bag to drizzle melted chocolate over the filled molds.

Add Berries: Top each yogurt bite with a small piece of your favorite fresh berry for an added burst of flavor and a pop of color.

Freeze: Place the filled tray in the freezer and freeze for at least 4-6 hours, or until completely solid.

Serve: Once frozen, remove the yogurt bites from the tray. If they stick, run warm water briefly on the outside of the tray to help release them.

Enjoy!: Serve immediately, or store the frozen bites in an airtight container in the freezer for up to two weeks. Enjoy these refreshing, healthy snacks anytime!
