Frozen Watermelon Pops

4 cups seedless watermelon, cubed

1 tablespoon fresh lime juice

1-2 tablespoons honey or agave syrup (adjust for sweetness)

1/4 cup coconut water (optional for added hydration)

Popsicle sticks

Silicone or paper popsicle molds

Instructions
 

Prepare the Watermelon: Begin by cutting the watermelon into cubes. Make sure to remove any seeds, then place the cubes into a blender or food processor.

    Blend the Ingredients: Add the fresh lime juice, honey or agave syrup, and coconut water (if using) to the blender with the watermelon. Blend until smooth and well combined.

      Taste and Adjust: Taste the watermelon blend and adjust sweetness if needed by adding more honey or agave syrup. Blend again to combine.

        Fill the Molds: Carefully pour the watermelon mixture into your popsicle molds, filling them just below the rim to allow for expansion as they freeze.

          Insert Sticks: Place the popsicle sticks into the center of each mold. If they don’t stay upright, you can freeze them for about 30 minutes before inserting the sticks.

            Freeze: Cover the molds with their lids or plastic wrap and place them in the freezer. Freeze for at least 4-6 hours or until completely solid.

              Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds until they loosen. Carefully pull the popsicles out and enjoy immediately!

                Storage: If you have leftovers, wrap them individually in plastic wrap and store them in an airtight container in the freezer for up to 2 weeks.
