1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

¼ cup brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

For the yogurt layer:

4 cups vanilla Greek yogurt

½ cup honey or maple syrup

1 teaspoon vanilla extract

For the crunch topping:

1 cup rolled oats

½ cup chopped pecans or walnuts

⅓ cup honey

½ teaspoon cinnamon

2 tablespoons unsalted butter, melted

Instructions
 

Prepare the crust: In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a rectangular baking dish (9x13 inches) to form an even layer. Set aside.

    Make the apple filling: In a large bowl, toss the sliced apples with brown sugar, cinnamon, lemon juice, and cornstarch until well coated. Spread the mixture evenly over the prepared graham cracker crust.
