Ingredients

Granola Cups:

1 ½ cups rolled oats

½ cup nuts (almonds, walnuts, or pecans), chopped

¼ cup honey or maple syrup

¼ cup coconut oil, melted

1 tsp vanilla extract

¼ tsp salt

Frozen Yogurt Filling:

2 cups Greek yogurt (plain or flavored)

2 tbsp honey or maple syrup (adjust based on yogurt sweetness)

1 tsp vanilla extract

Fresh fruit (berries, banana slices, or mango), for topping

Optional: ¼ cup chocolate chips or granola for extra crunch

Instructions

Prepare the Granola Cups:

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine rolled oats, chopped nuts, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix until all ingredients are well-coated.

      Shape the Cups:

Grease a muffin tin with cooking spray or coconut oil. Use your fingers or the back of a spoon to press the granola mixture firmly into the bottom and sides of each muffin cup, forming a little cup shape.

          Bake the Cups:

Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the granola is golden and fragrant. Remove from the oven and allow to cool completely in the tin.

              Make the Yogurt Filling:

In a separate bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.

                  Assemble the Cups:

Once the granola cups have cooled, gently remove them from the muffin tin. Spoon the yogurt filling into each granola cup.

                      Add Toppings:

Top each cup with fresh fruit and, if desired, sprinkle some chocolate chips or additional granola for extra texture.

                          Freeze:

Place the assembled cups in the freezer for about 2-3 hours, or until the yogurt is frozen and set.

                              Serve:

When ready to serve, let the cups sit at room temperature for a few minutes to soften slightly. Enjoy your deliciously creamy and crunchy Frozen Yogurt Granola Cups!
