2 cups rolled oats

1 cup nuts (almonds, walnuts, or pecans), chopped

1/2 cup unsweetened cocoa powder

1/2 cup maple syrup or honey

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup brewed coffee, cooled

1 cup Greek yogurt (plain or vanilla)

1/4 cup chocolate chips (dark or semi-sweet)

1/4 cup mini marshmallows (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, combine rolled oats, chopped nuts, cocoa powder, and salt. Stir well to ensure an even distribution of the cocoa.

      Combine Wet Ingredients: In a separate bowl, whisk together maple syrup (or honey), vanilla extract, and cooled brewed coffee until fully combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until all the oats and nuts are evenly coated.

          Bake the Mixture: Spread the granola mixture evenly on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown. Stir halfway through the baking to ensure an even bake.

            Cool the Granola: Remove from the oven and allow it to cool completely on the baking sheet. The mixture will harden as it cools.

              Form Clusters with Yogurt: Once cooled, break the granola into clusters and place them in a mixing bowl.

                Add Yogurt: Gently fold in the Greek yogurt until the clusters are well coated. Note that the mixture may be a bit sticky; that's okay!

                    Freeze the Clusters: Spoon dollops of the mixture onto a parchment-lined baking sheet or into silicone molds. Smooth them out slightly to form cluster shapes. Freeze for about 2-3 hours or until solid.
