2 cups fresh pineapple chunks

1 cup Greek yogurt (plain or vanilla)

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

1 tablespoon fresh lime juice

Pinch of salt

Coconut flakes (optional, for garnish)

Instructions
 

Prepare the Pineapple: In a blender, add the fresh pineapple chunks and blend until smooth. If you prefer some texture, you can leave a few small chunks in the mixture.

    Mix the Ingredients: In a mixing bowl, combine the Greek yogurt, chia seeds, honey (or maple syrup), lime juice, and a pinch of salt. Stir until well blended.

      Combine and Fold: Gently fold the pineapple puree into the yogurt mixture. Mix just until combined, ensuring you don’t completely lose the vibrant yellow color of the pineapple.

        Pour into Molds: Carefully pour the mixture into your popsicle molds, filling them about 3/4 full to allow for expansion while freezing.

          Insert Sticks: If your mold has a lid, place it on, or insert popsicle sticks directly into each mold.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.

              Unmold the Pops: To release the pops, run warm water over the outside of the molds for a few seconds, then gently pull the pops out.

                Serve and Garnish: If desired, roll the pops in coconut flakes for a tropical touch before serving. Enjoy your refreshing Pineapple Chia Pops!
