Frozen Yogurt Raspberry Chia Crunch Bars

For the Base:

1 cup rolled oats

½ cup almond flour

¼ cup honey or maple syrup

⅓ cup coconut oil, melted

1 teaspoon vanilla extract

¼ teaspoon salt

For the Raspberry Layer:

1 cup fresh raspberries (or frozen, thawed)

2 tablespoons chia seeds

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

½ teaspoon vanilla extract

For the Yogurt Layer:

2 cups Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

For the Crunch Topping:

½ cup granola (store-bought or homemade)

2 tablespoons sliced almonds (optional)

Instructions
 

Prepare the Base:

    In a medium bowl, combine the rolled oats, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix until well combined.

      Press the Base:

        Line an 8x8-inch baking dish with parchment paper. Pour the oat mixture into the prepared dish and press down evenly to form a solid base layer. Set aside.

          Make the Raspberry Layer:

            In a blender, combine the raspberries, chia seeds, honey (or maple syrup), lemon juice, and vanilla extract. Blend until smooth. Pour this mixture on top of the pressed base and spread it evenly.

              Add the Yogurt Layer:

                In a separate bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth. Gently spread this yogurt mixture over the raspberry layer, smoothing it out with a spatula.

                  Sprinkle the Crunch Topping:

                    Evenly scatter the granola and sliced almonds over the yogurt layer, pressing down lightly to help them stick.

                      Freeze:

                        Cover the dish with plastic wrap or foil and place it in the freezer for at least 4-6 hours, or until the bars are completely firm.

                          Slice and Serve:

                            Once frozen, let the bars sit at room temperature for about 5-10 minutes to soften slightly for easier slicing. Carefully lift them out of the baking dish using the parchment paper, slice them into bars, and enjoy!

                              Store:

                                Keep any leftover bars stored in an airtight container in the freezer for up to one month.
