1 cup plain Greek yogurt

1/2 cup raspberry puree (fresh or frozen raspberries blended)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

1 tablespoon sugar

Fresh raspberries for garnish (optional)

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs resemble wet sand.

    Form the crust: Press the mixture into mini tart or coin-shaped molds (silicone molds work best) to form a crust about 1/4 inch thick. Make sure the crust is evenly distributed.

      Freeze the crust: Place the molds in the freezer for about 15 minutes, allowing the crusts to set firmly.

        Make the filling: While the crust is freezing, combine the Greek yogurt, raspberry puree, honey (or maple syrup), vanilla extract, and salt in a bowl. Whisk until smooth and well-blended.

          Fill the molds: Remove the crusts from the freezer and spoon the yogurt mixture into each crust, filling them just to the top. Smooth the surface with a spatula for an even finish.

            Freeze again: Place the filled molds back into the freezer and let them set for at least 3 hours until completely frozen.

              Serve: Once frozen, gently pop the pie coins out of the molds. Let them sit at room temperature for about 5 minutes before serving for easier handling.
