2 cups Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups fresh or frozen raspberries, divided

1 cup granola

1/2 cup mini chocolate chips (optional)

Pinch of salt

12 whole grain cookie wafers or graham crackers

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth and well combined.

    Add Raspberries: Gently fold in 1 1/2 cups of raspberries to the yogurt mixture, being careful not to crush them too much. This will create a lovely marble effect while keeping some whole berries intact.

      Assemble the Sandwiches: Lay out 6 of the cookie wafers or graham crackers on a baking sheet. Spoon a generous amount of the yogurt-raspberry mixture onto each wafer, spreading it out evenly. If you love chocolate, sprinkle mini chocolate chips over the raspberry mixture.

        Top It Off: Place the remaining cookie wafers or graham crackers on top of each yogurt-filled base to create a sandwich. Gently press down to help them stick.
