Frozen Yogurt Raspberry Swirl Pops

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

1 cup fresh or frozen raspberries

1 tablespoon lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Yogurt Base:

    In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well until the mixture is smooth and evenly blended.

      Make the Raspberry Swirl:

        In a separate bowl, mash the raspberries with a fork. Add lemon juice and stir gently until combined. You can leave some raspberry chunks for texture.

          Layer the Mixtures:

            Spoon a layer of the yogurt mixture into the bottom of each popsicle mold, filling them about a third of the way. Next, add a spoonful of the raspberry mixture on top. Use a toothpick or a skewer to gently swirl the raspberry into the yogurt for a marbled effect. Continue layering with more yogurt and raspberry until the molds are full. Aim for a final swirl on top.

              Insert Sticks and Freeze:

                Place popsicle sticks into the center of each mold. Freeze for at least 4 hours or until solid.

                  Unmold and Serve:

                    To remove the pops from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and place them on a plate. Optionally, garnish with fresh mint leaves for an extra pop of color and flavor.

                      Enjoy Your Treat:

                        Serve immediately or store the pops in an airtight container in the freezer for up to two weeks.
