1 pound carrots, peeled and cut into uniform sticks

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons honey or maple syrup

Salt and pepper, to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Garlic Butter: In a small saucepan, melt the butter over medium heat. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and stir in the thyme and honey (or maple syrup). Season with salt and pepper to taste.

      Prepare the Carrots: In a large mixing bowl, combine the carrot sticks and the garlic butter mixture. Toss until the carrots are evenly coated.

        Roast the Carrots: Spread the coated carrots in a single layer on the prepared baking sheet. Make sure there’s enough space between them to allow for even roasting.

          Bake: Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the carrots are tender and caramelized.
