1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice level)

Salt and pepper to taste

1 tablespoon fresh lemon juice

2 tablespoons chopped fresh parsley

4 slices thick-cut sourdough bread

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Optional: lemon wedges for serving

Instructions
 

Prepare the Shrimp: In a skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

    Cook the Shrimp: Add the shrimp to the skillet and season with salt and pepper. Cook for 3-4 minutes, or until the shrimp turn pink and opaque. Stir in the lemon juice and chopped parsley, then remove from heat. Set aside.

      Prepare the Bread: Preheat your oven to 400°F (200°C). While it’s heating, place the sourdough slices on a baking sheet.

        Toast the Bread: In a small saucepan, melt the remaining 2 tablespoons of butter. Brush the melted butter on one side of each slice of bread. Bake for 5-7 minutes until slightly crispy.

          Assemble the Melts: Remove the bread from the oven. Spoon the shrimp mixture generously onto the toasted side of each slice. Top each with shredded mozzarella and a sprinkle of Parmesan cheese.

            Melt the Cheese: Return the baking sheet to the oven and bake for an additional 5-7 minutes or until the cheese is bubbly and golden.

              Serve: Remove from the oven and let cool for a minute. Serve warm, garnished with extra parsley and lemon wedges, if desired.
