Ingredients

4 bone-in, skin-on chicken thighs

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons olive oil

1 teaspoon lemon zest

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon paprika

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature will help achieve a crispy skin.

Prepare the Marinade: In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, lemon zest, salt, black pepper, and paprika. Mix until well combined.

Marinate the Chicken: Pat the chicken thighs dry with a paper towel. Rub the garlic herb mixture generously under the skin and on top of the chicken thighs, ensuring each piece is well-coated.

Add Lemon Juice: Squeeze the lemon juice over the marinated chicken thighs, letting it soak into the meat for extra flavor.

Arrange in Baking Dish: Place the chicken thighs skin-side up in a baking dish or on a rimmed baking sheet lined with parchment paper for easier cleanup.

Roast the Chicken: Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the skin is golden brown and crispy.

Rest the Chicken: Remove from the oven and let the chicken rest for 5 minutes. This step allows the juices to redistribute, keeping the meat moist.

Serve: Garnish with freshly chopped parsley and serve hot. Pair with your favorite sides, such as roasted vegetables or mashed potatoes.
