Ingredients

1 pound (450g) fresh cremini or button mushrooms, cleaned and trimmed

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon dried rosemary

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Mushrooms: Place the cleaned mushrooms in a large mixing bowl. If using larger mushrooms, consider cutting them into halves or quarters to ensure even cooking.

Make the Herb Mixture: In a small bowl, combine the olive oil, minced garlic, dried thyme, oregano, rosemary, sea salt, and black pepper. Blend these ingredients together to create a flavorful marinade.

Coat the Mushrooms: Pour the herb mixture over the mushrooms, tossing them gently to coat each piece evenly. Ensure they are well-coated in the savory herbs and oil.

Arrange on Baking Sheet: Spread the seasoned mushrooms out in a single layer on a baking sheet lined with parchment paper, ensuring they are not overcrowded for even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven and roast the mushrooms for 20-25 minutes, or until they are golden brown and tender. Stir the mushrooms halfway through cooking to encourage even roasting.

Garnish and Serve: Once cooked, remove the mushrooms from the oven and transfer them to a serving dish. If desired, add lemon zest for an extra burst of freshness. Sprinkle with fresh chopped parsley for added color and flavor.

Enjoy: Serve warm as a side dish, atop a salad, or as a delicious addition to pasta dishes!
